Potato Salad with Anchovy, Fennel and Almond Recipe

Recipe Ingredients

A [SERIOUSLY] good twist on an old favourite, bring this dish along to a barbecue with some friends for a tasty summer treat.

  • 1 kg baby potatoes
  • 1/2 cup HEINZ [SERIOUSLY] GOOD™ Mayonnaise
  • 200 g baby fennel, finely chopped
  • 2 Tbsp cornichons, finely sliced
  • 1 Tbsp baby caper berries
  • 2 Tbsp mixed chopped herbs (parsley, chives, tarragon)
  • 6-8 fillets of anchovies, chopped
  • 1/2 cup toasted sliced almonds

Recipe Method

  1. Cook potatoes in salted boiling water until tender, then cool. Once cool, cut in halves.
  2. Mix HEINZ [SERIOUSLY] GOOD™ Mayonnaise with anchovies, capers, cornichons and fennel.
  3. Fold in potatoes and herbs. Sprinkle toasted almonds on top to serve.
