Main Meal

Mushroom, Potato and Kumara Bake

What you will need

  • 3 medium floury potatoes, peeled and thinly sliced
  • 1 medium kumara, peeled and thinly sliced
  • 1 small onion, finely sliced
  • 500g jar Heinz Seriously Good Creamy Mushroom Pasta Bake

  • Crumb Topping
  • 1/2 cup breadcrumbs
  • 1/2 cup grated cheese
  • Handful chopped parsley

Method

1. Preheat the oven to 160°C (fan bake). Grease a 20cm baking or casserole dish. Place a layer of potatoes and kumara in the dish. Scatter over sliced onion. Season with freshly ground black pepper and a little salt to taste.

2. Repeat until all the vegetables are used. Pour over Heinz Seriously Good Mushroom Pasta Bake . Cover and cook for 45 minutes. Remove from the oven. Sprinkle over the crumble topping. Return to the oven and cook with the lid off for a further 30–45 minutes, until the vegetables are cooked and topping is golden. Stand for 5 minutes before serving.

 

Crumb topping

Mix together breadcrumbs, cheese and parsley.
